It's my birthday month, and breakfast/brunch is my favorite meal (#TeamEggsforDinner) so this month's recipe is getting decadent. 

Let's dive in. 

Chocolate Chocolate Chip Cheesecake Pancakes (GF)

  • 2 oz cream cheese
  • 1 egg
  • 2 heaping tbsp almond flour
  • 1 heaping tbsp cocoa powder
  • 1 tsp vanilla
  • Ground cinnamon to taste (I usually give it a few shakes)
  • Maple syrup or other sweetener to taste
  • Chocolate Chips (a handful or so)
  • Cooking fat of choice (Butter, coconut oil, etc.)


  1. Heat pan or griddle to medium/medium-high heat. 
  2. Add all ingredients except the chocolate chips to a food processor. Process until smooth, but don't over-process.
  3. Melt butter in pan/griddle. When foamy, add the pancake batter. I like to use a 1/4 cup measuring cup to keep them evenly sized. Also, it's best to keep these small since they're quite delicate. (Delicate = be very careful while flipping.)
  4. Add in a few chocolate chips to each pancake. 
  5. Cook until the edges bubble, approximately 4 minutes. 
  6. Flip and cook the other side until done, approximately another 4 minutes. 
  7. Plate up and serve immediately. 

Topping options: 

  • Berries alone or with whipped cream
  • Chocolate chips, chopped nuts, and maple syrup.
  • Trader Joe's Coffee Syrup and whiskey whipped cream. Because birthday month. And decadent.
